Purslane (Verdolaga)

Description:

Purslane is now known by archaeologists as verdolaga and is native to Texas, the Southwest US, and Mexico. Fresh, raw leaves can be used as salad and vegetable juice,åÊandåÊtender leaves are used in salads. Sauteed and gently stewed stems and leaves serve as a side dish with fish and poultry. Purslane is also a rich source of vitamin C, and some B-complex vitamins like riboflavin, niacin, pyridoxine, and caretonoids, as well as dietary minerals, such as iron, magnesium, calcium, potassium, and manganese.
