Italian Parsley native to the Mediterranean region of southern Europe. Italian flat parsley is used to flavor soups, sauces, stew, and adds a zesty flavor to salads. It melds well with seafood, as well as grilled or roasted meats. Compounds in Italian parsley’s essential oils like limonene, eugenol, and myristicin give the herb its aroma. The leafy herb is a good source of vitamins A, B, C and K, and the minerals iron, potassium, and copper. Italian parsley also contains folate.
